Chinese Chicken Salad I

Recipe Description

Makes 6 servings.


  • 3 cups cooked rice, cooled
  • 1 1/2 cups cooked Chicken breast cubes (about 1 whole breast)
  • 1 cup sliced celery
  • 1 8-ounce can sliced water chestnuts, drained
  • 1/2 cup sliced fresh Mushrooms
  • 1/4 cup sliced green onions
  • 1/4 cup diced red bell pepper
  • 1/4 cup sliced black olives
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ginger|ground ginger
  • 1/4 to 1/2 teaspoon ground white pepper
  • lettuce leaves


Combine rice, Chicken, celery, water chestnuts, Mushrooms, onions, red pepper and in large bowl.

Place oil, lemon juice, soy sauce, ginger and white pepper in small jar; shake well. Pour over rice mixture. Toss lightly. Serve on lettuce leaves.
