Chocolate Chip Soynut Cookies

Recipe Description

Ingredients

  • 3 cups brown sugar#About Brown sugar|light brown sugar, firmly packed
  • 2 cups shortening|vegetable shortening or margarine
  • 4 large eggs
  • 3 cups all purpose flour
  • 1 cup soy flour
  • 1 tsp salt
  • 2 tsp baking soda
  • 2 Tbs vanilla soy milk|soymilk
  • 2 tsp vanilla
  • 2 cups roasted soynuts, coarsely chopped
  • 4 cups semi-sweet chocolate morsels

Directions

  1. Preheat oven to 375°F.
  2. Beat shortening and granulated sugar|sugar in a large bowl.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in baking soda, salt and soy flour.
  5. Add all purpose flour gradually along with soy milk|soymilk and vanilla.
  6. Stir in soynuts and chocolate chips|chocolate morsels.
  7. Drop by rounded teaspoons onto ungreased baking sheets.
  8. Bake for 8 - 10 minutes or until golden brown.
  9. Cool 1 minute and remove to wire rack to cool completely.
