Saffron Paella Salad

Recipe Description

Makes 4 servings.

Ingredients

  • 3 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ teaspoon ground white pepper
  • 2½ cups cooked rice (cooked in chicken broth and saffron), cooled to room temperature
  • 1 cup cooked turkey meat|turkey breast cubes
  • 1 cup peeled and de-veined cooked shrimp
  • ½ cup diced red bell pepper
  • ½ cup cooked garden pea|green peas
  • ? cup chopped onion
  • ? cup sliced black olive|ripe olives
  • lettuce leaves

Directions

  1. Combine vinegar, oil, garlic and pepper in large bowl; mix well.
  2. Add rice, turkey meat|turkey, shrimp, red pepper, peas, onion and ; toss lightly.
  3. Serve on lettuce leaves.
