Saffron Paella Salad
Recipe Description
Makes 4 servings.Ingredients
- 3 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 1 clove garlic, minced
- ½ teaspoon ground white pepper
- 2½ cups cooked rice (cooked in chicken broth and saffron), cooled to room temperature
- 1 cup cooked turkey meat|turkey breast cubes
- 1 cup peeled and de-veined cooked shrimp
- ½ cup diced red bell pepper
- ½ cup cooked garden pea|green peas
- ? cup chopped onion
- ? cup sliced black olive|ripe olives
- lettuce leaves
- Combine vinegar, oil, garlic and pepper in large bowl; mix well.
- Add rice, turkey meat|turkey, shrimp, red pepper, peas, onion and ; toss lightly.
- Serve on lettuce leaves.
