Saffron Rice I
Recipe Description
Makes 4 servings.Ingredients
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 tablespoon butter or margarine
- 1 cup uncooked rice
- ? teaspoon ground saffron
- 1¾ to 2 cups chicken broth
- 2 tablespoons chopped fresh parsley
- Cook onion and garlic in margarine in 2- to 3-quart saucepan until soft.
- Add rice and saffron; stir 2 to 3 minutes.
- Add broth and bring to a boil. Lower heat to simmer; cover and cook 15 to 20 minutes or until rice is tender and liquid is absorbed.
- Add parsley and fluff with fork.
