Amish Chicken Noodle Soup

Ingredients

  • 3 lb chicken
  • 2 qts water
  • 2 tsp salt
  • 1½ cups chicken stock
  • 2 cups celery, chopped
  • 2 cups carrots, chopped
  • 1 tart apple, chopped
  • 1 cup onions, chopped
  • dash pepper
  • 4 cups egg noodles

Directions

  1. Cover chicken about 2½ hours.
  2. Remove chicken from kettle and strain broth.
  3. De-bone chicken and return to kettle with strained broth.
  4. Add chicken stock, celery, carrots, apple, onions, and pepper.
  5. Cook until vegetables are tender.
  6. Add noodles and cook 8 - 10 minutes.
