All-American Jambalaya

Ingredients

  • 2 tablespoons butter
  • 1 lb ground beef
  • ½ cup onion, diced
  • ¼ cup green bell pepper|green pepper, diced
  • 1 (28 ounces) can diced tomatoes
  • 1 small bay leaf|bay leaf
  • 1 teaspoon salt
  • ½ teaspoon granulated sugar|sugar
  • 1½ cups instant rice|Minute rice

Directions

  1. Melt butter in large skillet.
  2. Sauté onion, green pepper, and beef until browned.
  3. Drain fat.
  4. Drain tomatoes, and add enough water to juice to make 1½ cups.
  5. Add tomatoes, bay leaf|bay leaf, salt, granulated sugar|sugar, and liquid.
  6. Bring to a slow boil.
  7. Cover and simmer for 5 minutes.
  8. Add rice.
  9. Cover and simmer another 5 minutes.
