Apple Fennel Salad

Ingredients

  • ¼ cup red wine vinegar
  • 1½ tbsp olive oil
  • 1 tbsp frozen apple juice concentrate, thawed
  • 1½ tsp thyme, dried
  • ½ tsp salt
  • ¼ tsp pepper
  • ==
  • 8 oz pasta, fusilli, uncooked
  • 3 McIntosh apples, cored and diced
  • 2 tbsp lemon juice
  • ½ lbs fennel, trimmed and thinly sliced (about 1 cup)
  • 1 small Boston lettuce head

Directions

  1. In a small bowl, combine all dressing ingredients.
  2. Mix well.
  3. ==
  4. Boil pasta in salted water until cooked al dente, about 10 minutes.
  5. Drain and set aside.
  6. In a medium bowl, toss apples and lemon juice.
  7. Stir in fennel and toss well.
  8. Combine pasta and apple-fennel mix in a medium serving bowl.
  9. Add dressing and toss well.
  10. Serve on a bed of lettuce.
