Belgian-style Cottage Cheese

That cheese you might have tasted at grandma's place...here is a recipe to make a fine veggy cheese, Belgian-style, for any moment of your day ! Enjoy !Ingredients
- 2 cups low-fat cottage cheese
- 1½ teaspoons white wine vinegar or champagne vinegar
- 1 small shallot — finely chopped
- 1 tablespoon parsley — finely chopped
- 1 tablespoon chervil — finely chopped
- salt and pepper — to taste
- 1 tablespoon hazelnut oil — optional
- 6 slices good bread—fresh or toasted
- 1 medium black radish — thinly sliced
- vegetable crudités — optional
- In blender, blend cottage cheese until smooth.
- Remove to large bowl, add vinegar, shallot, parsley, and chervil.
- Season with salt and pepper.
- Add hazelnut oil if using.
- Serve on thick slices of good bread and decorate with the radish slices.
