Belgian-style Cottage Cheese

Recipe Description

That cheese you might have tasted at grandma's place...here is a recipe to make a fine veggy cheese, Belgian-style, for any moment of your day ! Enjoy !

Ingredients

  • 2 cups low-fat cottage cheese
  • 1½ teaspoons white wine vinegar or champagne vinegar
  • 1 small shallot — finely chopped
  • 1 tablespoon parsley — finely chopped
  • 1 tablespoon chervil — finely chopped
  • salt and pepper — to taste
  • 1 tablespoon hazelnut oil — optional
  • 6 slices good bread—fresh or toasted
  • 1 medium black radish — thinly sliced
  • vegetable crudités — optional

Directions

  1. In blender, blend cottage cheese until smooth.
  2. Remove to large bowl, add vinegar, shallot, parsley, and chervil.
  3. Season with salt and pepper.
  4. Add hazelnut oil if using.
  5. Serve on thick slices of good bread and decorate with the radish slices.
