Chicken and Rice Skillet

Recipe Description

Makes 6 servings.

Ingredients

  • 1 tablespoon vegetable oil
  • 1½ pounds boneless chicken breasts, cut into 1-inch cubes
  • 1 cup uncooked rice
  • 1 x 10¾-ounce can condensed cream of mushroom soup
  • 1 cup water
  • 1 x 10-ounce package frozen chopped broccoli, thawed
  • 1 x 2¼-ounce can sliced black olive|ripe olives

Directions

  1. Brown chicken in hot oil over high heat in large saucepan or Dutch oven.
  2. Add rice, soup, water, broccoli and ; bring to a boil.
  3. Cover and simmer 15 to 20 minutes or until rice is tender and liquid is absorbed.
