Breadfruit Salad

Recipe Description

breadfruit should be cooked as it begins to become ripe. Fully ripened, mushy, breadfruit is not as good.

Ingredients

  • 2 cups cubed, roasted breadfruit
  • 1 stalk celery, chopped
  • 1 small sweet pepper, chopped
  • 1 small Onion, chopped
  • 2 Tbsps. palm oil
  • 1 can mixed vegetables, drained
  • 1 tsp. salt
  • 1 head lettuce, separate leaves

Directions

  1. Combine breadfruit with celery, sweet pepper, and Onion.
  2. Moisten with palm oil, and toss in mixed vegetables.
  3. Chill for 10 minutes.
  4. Serve on a bed of lettuce
