Codfish Omelet

- 1 cup of cooked cod fish
- 4 eggs
- 2 tbsp of minced parsley
- 1 tbsp red pepper flakes|crushed red pepper
- 2 tbsp of minced onion
- salt and pepper to taste
- Mix together all ingredients.
- Empty mixture into a large frying pan with a little olive oil.
- Cook omelet on both sides until done.
- Serve with a salad and some good wine.
