Easy Cheesy Rice Burrito

Ingredients

  • 1 pound ground beef
  • 1 x 1¼- to 1½-ounce package dry taco seasoning mix
  • ¾ cup water
  • 1 x 15-to 16 ounce can pinto beans, drained and rinsed
  • 3 cups cooked rice
  • 2 tablespoons salsa
  • ¾ cup shredded Cheddar cheese
  • 6 x 10-inch flour tortillas
  • ¼ cup sour cream, optional

Directions

  1. Brown meat in large skillet over medium heat, about 8 minutes. Drain.
  2. Add taco seasoning mix and water; cook and stir until thickened, about 2 minutes.
  3. Add pinto bean|beans, rice, salsa and cheese; stir until well blended and heated through.
  4. Remove from heat. Spread about 1 cup of mixture on each tortilla.
  5. Wrap up and serve immediately.
  6. Serve with sour cream, if desired.
