Gluten-free Scrambled Eggs with Rice

Ingredients

  • ¼ cup chopped onion
  • ¼ cup gluten-free margarine
  • 6 eggs
  • ? cup cooked rice
  • ½ cup half-and-half
  • salt and pepper to taste
  • 1 cup grated American cheese

Directions

  1. Cook onion in margarine until golden.
  2. Beat eggs and milk until foamy.
  3. Add cheese, rice and seasoning.
  4. Pour over cooked onion.
  5. Cover over low heat until set.
  6. Stir frequently.
