Cream of Spiced Butternut Pumpkin Soup

This soup is simply beautiful. I have prepared this soup many times and is always a hit!. Some people don't eat pumpkin for some reason, well if you try this recipe, I'm sure you'll make it again. Enjoy!* 15 servings

Ingredients
- 1 onion
- 1 clove garlic, chopped
- 60 g butter
- 1 kg pumpkin, diced (peeled)
- 1 pinch granulated sugar|sugar
- 1 pinch nutmeg
- 1 teaspoon curry powder
- 1 bay leaf
- 1 liter chicken stock
- 500 ml milk
- 100 ml cream
- Sauté onion and garlic in the butter until soft.
- Add pumpkin, granulated sugar|sugar, nutmeg and curry.
- Add stock and bay leaf.
- simmer for 30 minutes.
- Remove bay leaf.
- Puree in blender (hand held blender is fine) with milk.
- Season to taste and finish with cream and chives.
