White Christmas (New Zealand style)

For those non-NZers, Kremelta is the equivalent of the Australian "Copha" which is a white coconut based fat. Memories of primary school cooking classes...

Ingredients

  • 1 cup desiccated coconut
  • 1 cup rice crispies|rice bubbles
  • ? cup golden raisin|sultanas
  • ? cup currants
  • ? cup raisins
  • 1 cup powdered sugar|icing sugar
  • 1 cup whole powdered milk
  • 6 - 7 ounces copha|Kremelta
  • 1 teaspoon vanilla extract

Directions

  1. Mix dry ingredients in a bowl.
  2. Melt Kremelta and pour over dry mix; mix well.
  3. Press into a flat, lightly greased, baking tin and cut before too hard.
  4. Refrigerate.
