Yam chips

Ingredients

  • 1 tbl virgin olive oil
  • 2 tbl fresh rosemary
  • 2 tbl fresh sage sliced
  • 2 tsp fresh oregano
  • 1 tsp fresh lime thyme
  • 1/2 tsp kosher or sea salt
  • 1 tsp cracked pepper
  • 1 x yam peeled and cut in chunks
  • 1 x sweet potato peeled and cut in chunks

Directions

  1. Pour oil into a large baking pan and swirl to cover bottom. Arrange herbs over oil, sprinkle with half the salt and pepper.
  2. Arrange yam and sweet potato chunks on top, sprinkle with remaining salt and pepper and bake at 350 degrees until soft (35-40 minutes).
  3. Serves Four to Six
