Yaounde Groundnut Soup

Ingredients

  • 1 lb nut meal|ground nuts, roasted and shelled
  • 4 cups consommé
  • 1 cup milk
  • salt and pepper to taste

Directions

  1. Pound the nuts to break them into pieces.
  2. Simmer with the consommé for 30 minutes or until nuts are tender.
  3. Force the peanuts through a sieve.
  4. Add milk and seasoning to the sieved nuts and pour on the remaining stock.
  5. Reheat for a further 10 minutes or until done.
