Banana Cake Papuan-style


  • ½ cup margarine or butter
  • ½ cup of granulated sugar|sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 medium size bananas (mashed)
  • 1 teaspoon baking soda|bicarbonate of soda
  • 1½ cups of self-rising flour|self-raising flour
  • ? cup of milk - well enough to give it the right texture, wet, but not runny.


  1. Pre-heat oven to 180 °C (gas/electric).
  2. Beat butter, granulated sugar|sugar and vanilla extract until creamy.
  3. Gradually beat in eggs and add mashed bananas.
  4. Mix milk and baking soda|bicarbonate of soda and fold into banana mixture with flour.
  5. Pour batter into a round greased 20 cm deep-sided cake pan.
  6. Bake for 45-50 minutes in a hot oven.
