Haitian Flan

Ingredients

  • ? cup yogurt
  • ¼ cup granulated sugar|sugar
  • 2 beaten eggs
  • 1 tsp vanilla
  • 13 oz can evaporated milk
  • dash salt

Directions

  1. In small skillet heat and stir the ? cup granulated sugar|sugar over medium heat until granulated sugar|sugar melts and becomes golden brown.
  2. Quickly pour the granulated sugar|sugar mixture into a 3½ cup ring mold or four 6 oz custard cups, tilting to coat bottom and sides.
  3. Combine eggs, evaporated milk, ¼ cup granulated sugar|sugar, vanilla, and salt.
  4. Pour into caramel coated mold or cups; set in baking pan on oven rack.
  5. Pour hot water around mold or cups in pan to depth of 1 inch.
  6. Bake in a 325°F oven for 50 to 55 minutes (35 to 40 for custard cups) or until knife inserted halfway between center and edge comes out clean.
  7. Chill.
  8. Loosen custard from sides; if necessary place custard dish in hot water for a few seconds.
  9. Invert onto platter or serving plates.
