Ukrainian Pagach
Ingredients
- 3 medium potatoes, peeled and diced
- 1 medium onion, chopped
- 2 tablespoons margarine
- ½ teaspoon salt (to taste)
- ¼ teaspoon pepper (to taste)
- 1 tablespoon milk
- 5 ounces grated Cheddar cheese
- 1 pkg. phyllo pastry dough
- 1 egg
- coarse salt
- Cook potatoes in boiling salted water until tender and then drain,soute onion until tender too.
- Mash the potatoes add onions, salt, pepper, cheese, and milk, blending well.
- Place thawed phyllo on floured surface slice into 2" wide strips brush with butter and place on heaping tbsp. of potato mixture on phyllo fold phyllo into triangle pkgs
- Preheat oven to 375 °F
- Repeat with potato mixture until all is used up brush with 1 egg beaten and sprinkle with coarse salt
- Bake at 375 °F for 10-15 minutes, or until golden brown.
- Serve with sour cream and bacon bits{optional}
