Avocado Mousse I

Recipe Description

This recipe serves 2 people


  • 3 avocado
  • 3 dl cream
  • 1 cl Tabasco sauce
  • 6 gelatine leaves


  1. Remove seed and skin from the avocado
  2. Purée the avocado with chicken stock and cream.
  3. Season and add Tabasco sauce|Tabasco to taste.
  4. Add melted gelatine and fold in the whipped cream.
  5. Pour into the moulds and allow to set in the fridge.
  6. Dip the mould in hot water for four seconds and unmould.
  7. Arrange on an hors d'oeuvre platter and garnish with shrimp, smoked salmon, caviar and pickles.
