Cuban Guacamole

- 2 Large or 4 Small Genuine California Avacados
- 1 Large pineapple
- ¼ Cup Spainsh olive oil
- ¼ Cup fresly squeezed lime juice
- 1/8 tsp salt
- 1 Cup red onion, peeled and cut into slivers
Slice the pineapple lengthwise into quarters. Peel it and remove the fibrous core. Cut the pineapple into 1 inch cubes and place in a salad bowl
Cut the avocados in half lenghtwise, remove the pits and cut in half again. Carefully remove the skin and cut the avocados into bite-sized pieces. Add them to the pineapple.
Whisk together the olive oil, lime juice, and salt and pour over the fruit.
Serve and enjoy!
