Curried Chicken and Rice Salad

Recipe Description

Makes 6 servings.


  • 3 cups cooked rice, cooled
  • 2 1/2 to 3 cups cooked Chicken, cut into thin strips
  • 1 tart red Apple, cored and chopped
  • 1/2 cup seedless Raisins
  • 1/2 cup sliced celery
  • 3/4 cup Mayonnaise
  • 1 teaspoon curry powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • lettuce leaves


Combine rice, Chicken, Apple, Raisins and celery in large bowl.

Blend Mayonnaise, curry, salt and pepper; toss lightly with rice mixture. Chill. Serve on lettuce leaves.
