Baked Stuffed California Avocados
Ingredients
- 2 Cups diced Chicken or Turkey
- ¼ Cup California sherry
- 1 ½ Cups diced celery
- ½ Cup slivered toasted almonds
- 1 pimento chopped
- ½ Cup real Mayonnaise
- 2 Tbsp lemon juice
- 1 Tbsp grated lemon rind
- 1 tsp minced Onion
- 1 tsp salt
- ¼ tsp black pepper
- 3 avocados peeled, cut lengthwise
Preheat oven to 450 Degrees.
Heat the following until very hot.
In a saucepan heat the Chicken and sherry.
Add celery, almonds, pimento and the combined Mayonnaise, lemon juice, rind, Onion, salt and pepper, blending thoroughly.
Fill avocados.
Place in a pan, bake in very hot oven until lightly browned.
Serve immediately.
Baking time: About 15 minutes.
