Baked Stuffed California Avocados


  • 2 Cups diced Chicken or Turkey
  • ¼ Cup California sherry
  • 1 ½ Cups diced celery
  • ½ Cup slivered toasted almonds
  • 1 pimento chopped
  • ½ Cup real Mayonnaise
  • 2 Tbsp lemon juice
  • 1 Tbsp grated lemon rind
  • 1 tsp minced Onion
  • 1 tsp salt
  • ¼ tsp black pepper
  • 3 avocados peeled, cut lengthwise


Preheat oven to 450 Degrees.

Heat the following until very hot.

In a saucepan heat the Chicken and sherry.

Add celery, almonds, pimento and the combined Mayonnaise, lemon juice, rind, Onion, salt and pepper, blending thoroughly.

Fill avocados.

Place in a pan, bake in very hot oven until lightly browned.

Serve immediately.

Baking time: About 15 minutes.
