Easy Rice Pudding Pie with Fruit

Recipe Description

Makes 6 to 8 servings.

Ingredients

  • ½ cup granulated sugar|sugar
  • ¼ cup flour|all-purpose flour
  • 3 cups milk
  • 2 eggs, slightly beaten
  • 2 cups cooked rice
  • 2 teaspoons grated orange peel
  • 1 teaspoon vanilla extract
  • ½ cup whipped topping
  • 1 prepared graham cracker crust
  • 1 x 11-ounce can mandarin oranges, drained
  • 2 kiwi fruits, sliced
  • 1 banana, sliced

Directions

  1. Combine granulated sugar|sugar and flour in 2-quart saucepan; gradually stir in milk.
  2. Cook, stirring constantly, over medium heat until thick and bubbly, about 10 minutes.
  3. Reduce heat; cook, stirring, an additional 2 minutes.
  4. Remove from heat.
  5. Gradually stir in 1 cup hot mixture into eggs.
  6. Return egg mixture to saucepan; bring to a slow boil.
  7. Cook, stirring, 2 minutes.
  8. Remove from heat.
  9. Stir in cooked rice, orange peel and vanilla.
  10. Cover and chill in refrigerator.
  11. Fold in whipped topping; pour into crust.
  12. Just before serving, garnish with oranges, kiwi|kiwi fruit and banana.
