Gluten-free Coffee Cake

Ingredients

  • ¼ cup olive oil
  • one beaten egg
  • ½ cup milk
  • 1½ cup gluten-free flour
  • plus 1½ teaspoon xanthan|xanthan gum
  • ¾ cup granulated sugar|sugar
  • 2 teaspoon baking powder
  • dash of salt

  • ½ cup gluten-free brown sugar
  • 2 tablespoons gluten-free flour
  • 2 teaspoon ground gluten-free cinnamon
  • 2 tablespoon melted butter
  • ¾ cup broken nuts (your choice)

Directions

  1. Combine vegetable oil|salad oil, egg, and milk.
  2. Sift dry ingredients and add, mixing will.
  3. Pour into greased 9 x 9 x 2-inch pan.
  4. Sprinkle with spicy topping*.
  5. Bake at 375 °F for about 25 minutes.
