Gluten-free Oreo-style Cookies

Ingredients

  • ¼ cup cocoa or carob powder
  • ¼ cup potato starch|potato flour
  • ¼ cup rice flour
  • ½ cup granulated sugar|white sugar
  • ? cup stick margarine
  • 1 egg

Directions

  1. Preheat oven to 350 °F.
  2. Grease cookie sheet.
  3. Mix dry ingredients together.
  4. Beat egg.
  5. Mix egg and margarine together; mix in with dry ingredients (may have to use hands).
  6. Form dough into 1-inch cylinder-shaped balls and place on cookie sheet.
  7. Flatten with a fork dipped in cold water.
  8. Bake at 350 °F for 12 - 15 minutes.
  9. Once cooled, put frosting between the smooth halves of the cookies and sandwich two together.
