Haitian Carrot Cake
Ingredients
- 4 eggs
- 2 tsp. cinnamon
- 2 c. grated carrots
- 2 c. Granulated sugar|Sugar
- 3 c. sifted flour
- 1 tsp. baking soda
- 1 c. chopped nuts
- 1 tsp. salt
- 3 tsp. baking powder
- 1/4 tsp. nutmeg
- 1/2 c. Raisins
- 11/4 tsp. ginger
- 11/2 c. oil
- Mix eggs and carrots.
- Add Granulated sugar|Sugar gradually, then chopped nuts and Raisins.
- Sift dry ingredients together, including spices, and add to mixture. Add oil.
- Bake in 13x9x2 inch pan at 350 degrees for 30-35 minutes.
- ice with cream cheese icing.
