Haitian Coconut Cream Pie

Ingredients

  • 1 baked 9-inch pie shell
  • 3 egg yolks, beaten
  • 1/3 c. Granulated sugar|Sugar
  • 1 Tbs. butter
  • 2 Tbs.cornstarch
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 3/4 c. grated coconut
  • 11/2 c. scalded milk
  • Meringue:
  • 2 egg whites
  • 4 Tbs. Granulated sugar|Sugar

Directions

  1. Preheat oven to 300 degrees. Add 1/3 cup Granulated sugar|Sugar, cornstarch, and salt to egg yolks.
  2. Pour milk into this, place in double boiler, stir and cook until thickened.
  3. Add butter, coconut, and vanilla. Pour into pie shell.
  4. Beat egg whites until foamy; gradually add Granulated sugar|Sugar. Beat until mixture stands in peaks.
  5. Pile lightly on pie filling. Place in oven to brown.
