Kashmir Rice Dressing
Recipe Description
Makes 6 servings. Serve with broiled chicken, roast turkey meat|turkey or white fish.Ingredients
- 1 cup chopped onion
- 1 clove garlic, minced
- 2 tablespoons butter or margarine
- 3 cups hot cooked rice
- 1 teaspoon salt
- 1 teaspoon ginger|ground ginger
- 1 teaspoon chili powder
- ¼ teaspoon ground black pepper
- ½ cup canned tomatoes, drained
- ½ cup flaked coconut
- ? cup chopped cashew nuts, divided
- 1 cup yogurt
- Cook onion and garlic in butter until tender.
- Add rice, salt, ginger, chili powder, pepper, tomatoes, coconut and ? cup nuts. Toss lightly.
- Fold in yogurt. Heat through.
- Top with remaining ? cup nuts.
