Kashmir Rice Dressing

Recipe Description

Makes 6 servings. Serve with broiled chicken, roast turkey meat|turkey or white fish.

Ingredients

  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 tablespoons butter or margarine
  • 3 cups hot cooked rice
  • 1 teaspoon salt
  • 1 teaspoon ginger|ground ginger
  • 1 teaspoon chili powder
  • ¼ teaspoon ground black pepper
  • ½ cup canned tomatoes, drained
  • ½ cup flaked coconut
  • ? cup chopped cashew nuts, divided
  • 1 cup yogurt

Directions

  1. Cook onion and garlic in butter until tender.
  2. Add rice, salt, ginger, chili powder, pepper, tomatoes, coconut and ? cup nuts. Toss lightly.
  3. Fold in yogurt. Heat through.
  4. Top with remaining ? cup nuts.
