Lemon Chicken Rice
Recipe Description
Makes 4 servings.Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast, cut into strips
- 1 clove garlic, crushed
- 1 cup uncooked rice
- 1 x 14½-ounce can chicken broth
- 1 tablespoon grated lemon peel
- ½ teaspoon ground black pepper
- Heat oil in large skillet over medium-high heat until hot.
- Add chicken and garlic; cook and stir until browned.
- Stir in rice and broth. Cover and cook 15 minutes or until liquid is absorbed.
- Stir in lemon peel and pepper.
- Serve immediately.
