Carnival Rice Salad
Recipe Description
Makes 6 servings.Ingredients
- 3 cups cooked brown rice, cooled to room temperature
- 1 cup cooked pinto beans
- 1 cup chopped fresh tomato
- 1 cup cooked Chicken cubes
- 1 cup (4 ounces) shredded Cheddar or American cheese
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/3 cup prepared Italian dressing
- lettuce leaves (optional)
Combine rice, beans, tomato, Chicken, Cheese, parsley, salt and pepper in large bowl. Pour dressing over rice mixture; toss lightly. Serve on lettuce leaves, if desired.
