Cheese Omelet


  • 4 eggs, separated
  • 4 Tbsp hot water
  • ½ tsp salt
  • 2 Tbsp breadcrumbs
  • 1 cup grated cheese
  • 1 Tbsp butter


  1. Beat the egg yolks thoroughly and add to them the hot water, salt, crumbs, and cheese.
  2. Beat the egg whites until stiff, but not dry, and fold them carefully into the yolk mixture.
  3. Heat the butter in an omelet pan. Pour in the mixture, brown very slowly over the heat, and then place in the oven to cook the top.
  4. Serve at once.
