Pako Salad

Recipe Description

Pako is a type of wild fiddlehead|fern. For this salad the pako shoots are used.

Ingredients

  • ½ kilo fiddlehead|pako (cut and boiled)
  • 4 tomatoes (washed and sliced into rings)
  • 2 medium red onions (sliced into rings)
  • 4 hard-boiled eggs (sliced into rings)
  • 3 medium potatoes (peeled, boiled and cubed)
  • 2 cups vinegar
  • ½ teaspoon granulated sugar|white sugar
  • 1 teaspoon black pepper (freshly grounded_
  • ¼ teaspoon table salt

Directions

  1. In a big wooden or crystal bowl, arrange pako.
  2. Top with sliced tomatoes and onions, cubed potatoes and hardboiled eggs.
  3. In another dressing bowl, combine vinegar, granulated sugar|sugar, black pepper and salt.
  4. Serve salad with the vinegar dressing.
