Chicken and Rice Monte Carlo

Recipe Description

Makes 6 servings.

Ingredients

  • 12 choice chicken pieces
  • 2 tablespoons butter or margarine
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ? teaspoon ground black pepper
  • 1 cup sherry or dry white wine
  • ½ cup orange juice
  • 1 medium onion, sliced
  • 1 x 4-ounce can sliced mushrooms, undrained
  • 1 tablespoon cornstarch
  • ½ green green bell pepper|bell pepper, cut into strips
  • 3 cups hot cooked rice

Directions

  1. Brown chicken in butter and oil in large skillet about 15 minutes. Pour off drippings; season chicken with salt and pepper.
  2. Add wine, juice, onion and mushrooms to skillet; stir to loosen brown particles. Cover and simmer about 1 hour, or until chicken is tender.
  3. Combine cornstarch with 2 tablespoons water.
  4. Add to skillet with green bell pepper|green pepper; cook until liquid is clear and thickened.
  5. Serve chicken and sauce on rice.
