Passover Cake

Ingredients

  • 9 eggs
  • 1¾ cup granulated sugar|sugar
  • lemon juice|juice and grated rind of one lemon
  • ½ cup potato starch
  • ½ cup matzo cake meal|matzoh cake meal

Directions

  1. Preheat oven to 350 °F.
  2. Separate 7 eggs.
  3. Beat whites until stiff but not dry.
  4. Add two whole eggs to the egg yolk|yolks and start beating.
  5. Gradually add granulated sugar|sugar, lemon juice and rind while continuing to beat.
  6. Add potato starch and matzo cake meal|matzo cake flour.
  7. Carefully but thoroughly fold in beaten whites.
  8. Bake in an ungreased 10-inch tube pan for 40-50 minutes.
  9. Invert pan until cool.
