Kelsey’s Watermelon, Ginger & Lime Granita

Kelsey Nixon ups the granita game with this simple, icebox recipe that is big on flavor.

Watermelon and ginger might sound like a strange combination, but we’re asking you to take a leap of faith with us on this one. The ginger kicks up the flavor, while marrying nicely with the sweetness of the watermelon.

First, Kelsey makes a watermelon puree in a blender. Even though the watermelon is seedless, always strain your puree for any stray particles or seeds that made it through.

Next, make simple syrup by placing ½ cup of the watermelon puree and ½ cup of sugar into a saucepan, along with lime zest and the ginger coins. Bring the mixture to a simmer until the sugar is dissolved.

Add the remaining grated ginger to the watermelon water, as well as the cooled watermelon-simple syrup. Give everything a good stir to make sure it’s all combined.

Put the mixture in a 9×13 pan (or any other flat pan that fits inside your freezer) and put in the freezer for 30 minutes. After that time is up, scrape the icy mixture with a fork to create semi-slush. Put back in the freezer for another 30 minutes. Repeat this process until you get the consistency you like.

When the granita is ready, serve in tall glasses or bowls. Top with fleur de sel (French sea salt) for an extra oomph. Ahhh, it’s so refreshing!

  • ¼ cup fresh lime juice
  • 1 lime, zested
  • 6 cups roughly chopped seedless watermelon (about 2 pounds)
  • ½ cup sugar
  • 1 (2-inch) piece of ginger, divided
  • Fluer de sel for garnish
