Alton Brown’s Berry Crisps

It’s a good thing these are individual desserts, or you might be fighting for the last bite!

Alton Brown makes these heavenly fruit-laden cups with berries, but really you can use any fruit and come out with a delicious product.

Berries are plentiful during the summer months, and they do make the best crisps. You can use either frozen or fresh, and you can do one single type of berry or a mixed bowl! It’s really up to you.

This recipe is really 2 parts—first you make the “crisp” topping (a sort of shortcut streusel) and second you prepare the fruit.

So first, the streusel/ crisp topping; it’s literally every ingredient except the butter into a bowl. Once those are mixed, cut in the cubed butter chunks. You don’t want to blend the butter in completely, instead leaving chunks to melt in the oven.

Next, get the fruit ready. Mix the fruit, sugar, and cornstarch together with ½ cup of the streusel topping for added flavor.

Transfer this mixture into individual ramekins. Top the ramekins with the streusel topping. Bake for 30-35 minutes and let cool for another 30 minutes. The cooling step is very important and you should NOT skip it.

You can add a dollop of fresh whipped cream or vanilla ice cream on top for extra decadence. But honestly, we love it plain as well!

Berry Crisps Ingredients:

  • 12 ounces frozen berries (blueberries or raspberries)
  • ¼ cup sugar
  • 2 teaspoons cornstarch
  • 5 ounces all-purpose flour (approximately 1 cup)
  • 2/3 cup sugar
  • 1 ½ cups chopped nuts like walnuts, pecans, or almonds
  • 1 ½ cups crushed crackers, gingersnaps, or cereal
  • 4 ounces unsalted butter, cubed and chilled
