Claire Robinson’s Zucchini Goat Cheese Frittata

In this installment of Meatless Mondays, Claire Robinson shares a five-ingredient recipe for a zucchini goat cheese frittata that will feed your family in under half an hour.

Most of us here at RecipeHub don’t really do mornings too well, so an easy-to-make and quick recipe in the morning is right up our alleys. While it’s slightly sacrilege to have breakfast without bacon, this tasty frittata really does hit the spot.

As Claire mentions in her video, this recipe is about five thousand times easier when you use a non-stick skillet. You can make it with a regular skillet if you want, but more often than not, you end up with a skillet caked with eggs and a frittata that’s missing about a quarter of its bottom.

Also, since this is one of her quick “five ingredient fixes” Claire only seasons this dish with just salt and pepper to taste. If you want to zest things up, there are a handful of spices that could add a little more pop to this dish. Test out variations with oregano, cumin, basil, or, our personal favorite: smoked paprika. Toss in a hearty teaspoon or thereabouts, and you’ll really be on the express train to flavor town.

The beauty of a Frittata is that there is almost no “wrong” way to make it. Claire’s zucchini goat cheese frittata recipe is a fantastic jumping-off point, but it is by no means the only or best recipe; we have always believed that the best recipe is a relative term, and you should make things however they taste good to you.
