In today’s installment of Southern at Heart, Damaris makes a breakfast quiche with a delicious combination of potatoes, country ham, cheese, and green onions.

If you know Mother’s Day is going to be busy, make this quiche the night before. All you’ll have to do come Sunday morning is warm it up!

Damaris Phillips shows us how to make an simple yet tasty breakfast quiche with her favorite ingredient—country ham.

What is country ham? It’s a variety of ham that has been cured with salt and smoked. It’s typically found throughout the South and can be used in a variety of dishes for breakfast, lunch, and dinner.

If you’re in a part of the country that doesn’t have country ham, you can definitely substitute any pork product of your choice. Prosciutto is the closest substitute, but you could also use ham, bacon, or sausage.

First thing you have to do is blind bake the pie crust. Damaris uses a store-bought crust, which we endorse doing as well. It saves time and is close to the same quality as homemade.

Blind baking is a simple process, where you just bake off the crust with no filling. This is necessary so you don’t end up with raw pie crust at the bottom.

Next, prepare all your filling ingredients. Poach the potatoes in oil, get a nice crispy coat on the country ham, grate you cheese, and chop up your green onions. Then prepare the simple custard base of eggs and half and half.

When the crust is done blind baking, assemble the quiche. Potatoes, ham, and half of the cheese go in first. Then add the custard mixture, and top with the remaining cheese and green onions.

Pop that into the oven for 35 to 40 minutes. If you’re preparing this the night before, allow for the quiche to cool completely on the counter before placing it in the fridge overnight.

Serve this breakfast quiche with a healthy salad of spring greens with balsamic vinaigrette and a nice Mimosa. Your mom is sure to love it!

  • Vegetable oil
  • ½ cup diced country ham
  • 3 new potatoes, sliced ¼ inch thick
  • 1 homemade or store-bought 9-inch pie crust
  • 4 large eggs
  • ¾ cups half and half
  • Kosher salt
  • 1 teaspoon black pepper
  • 1 cup grated aged gouda
  • 1 green onion, chopped
