In today’s installment of Healthy Appetite, Ellie Krieger shows us a simple, no fuss way to make bite-sized tarts. They’ll only look like it tooks tons of effort, we promise!

First things first, get your filling ready. I like Ellie’s shortcut of draining lemon flavored yogurt in the fridge to make a thick custard-like filling. Not only is this lower in calories but its low effort with the same great taste that complements the fruits nicely.

While that’s draining in the fridge, get your tart crust ready. Personally, I like a butter crust but canola oil is definitely an acceptable heart-healthy substitute. Once the dough has come together, chill it for 30 minutes to make it easier to work with and bake off.

Bake off the tarts in the pan and let them cool. While waiting for them to cool, prep your fruits. Dice the mango finely and cut the kiwi into small triangle shapes. This will make them easy to fit into the tart shell—and also easy for your guests to eat!

Now that everything is ready, you just have to assemble. Place a teaspoon (or dollop) of your lemon “custard” into the tarts. We like to use a pastry bag for this, but if you don’t have one that’s okay. Next pile in your superfruits, then top the tarts off with a fresh sprig of mint and a light dusting of confectioner’s sugar.

Kiwi Mango Tarts Ingredients:

  • 1½ cups nonfat lemon flavored yogurt
  • ¼ cup canola oil
  • ¼ cup sugar
  • 1 egg
  • ¾ cup whole-grain pastry flour
  • ½ cup all-purpose flour
  • 1 mango, diced
  • 3 kiwi fruits, peeled and sliced
  • 24 small mint leaves
  • teaspoons confectioners’ sugar
