In today’s installment of Giada at Home, Giada wows us again with a simple dish that is packed full of flavor.
Giada pairs delicious zucchini—summer staples—with salty prosciutto together on the grill for a hand-held treat. Top it all off with the lemon-basil pesto she makes, and you’ve got yourself one great summer time meal!
As simple as this dish is, don’t forget that you need to soak your wooden skewers in water for at least 30 minutes before loading them up with goodies. This step prevents them from burning on the grill.
Another great tip Giada mentions is to make extra of the lemon-basil pesto. It makes great leftovers and can be used to top pasta salads, sandwich spreads, or nearly anything you can think of.
Once your Grilled Prosciutto & Zucchini skewers are ready to go, pack them up for a picnic. Serve them with a nice summer salad, or light side dish like pomegranate quinoa pilaf.
Lemon-Basil Pesto Ingredients:
- 2 packed cups fresh basil leaves
- 1/3 cup toasted pine nuts
- 2 tablespoons fresh lemon juice
- 1 clove garlic, peeled
- Zest of 1 large lemon
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1/3 cup extra virgin olive oil
- 1/3 cup grated Parmesan
