Peanut butter and jelly sandwiches are great for the first week of school, but what are you planning for lunch the rest of the school year?

Giada de Laurentiis whips up an easy to make, kid-friendly snack that you can easily pack in your kid’s lunchboxes. Heck, you could even make up a couple extra for your own lunch!

Giada’s quesadillas are packed with nutritious goodness—apples, honey-flavored cream cheese, melted cheddar and mozzarella, and deli turkey slices wrapped in a whole wheat tortilla.

Although the preparation of this “quesadilla” is more like a high roller or pinwheel sandwich (think: jelly roll), we’ll allow the use of this term because of the melted cheese that binds everything together.

Also, Giada makes a great point that you can customize this roll-up to whatever you child’s tastes are. We all know that children can be fickle about food, so change up the turkey for ham, apples for pears, or really whatever their favorites of the moment are.

In the end, you can be confident that you’re sending your kids to school with a nutrient-packed lunch that will probably get some envious stares.

Rolled Turkey & Apple Quesadilla Ingredients:

  • 1/3 cup whipped cream cheese at room temperature
  • ½ tablespoon honey
  • 8-inch whole wheat tortillas
  • ½ small red apple cut into ¼ inch slices
  • 1 cup shredded smoked mozzarella
  • 1 cup shredded mild cheddar
  • 8 thin slices of deli turkey meat
