Although this dish stars yams (also known as sweet potatoes)—a staple of Thanksgiving—you can prepare this nearly anytime of the year! If you can’t find sweet potatoes, just adjust the recipe to include more potatoes. It’s great!

Giada’s 3-Cheese Potato Gratin Ingredients:

  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, chopped
  • 2 large cloves garlic, chopped
  • 1/3 cup heavy whipping cream
  • 1/3 cup low sodium chicken broth
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon coarse kosher salt
  • ¾ teaspoon freshly ground pepper
  • 5 small Yukon gold potatoes, peeled, cut into 1/8 inch thick rounds
  • 1 large yam (red skinned sweet potatoes), cut into 1/8 inch thick rounds
  • 1 ½ cups coarsely ground gruyere cheese
  • ½ cup coarsely grated Asiago cheese
  • ½ cup finely grated Pecorino Romano cheese
