Gina Neely’s Pear And Apple Cobbler

You can’t go wrong with a tasty cobbler for a great cold weather dessert. The spice, the light crust, and some home made whipped cream make this dessert the stuff that dreams are made of.

For this unique spin on a classic cobbler, the Neelys are foregoing a berry filling, and instead are pairing tart Granny Smith apples with sweet Bosc pears for a delicious, understated fruit cobbler.

This cobbler is easy to make, and avoids all the shortcut, store-bought ingredients that some recipes might suggest. Rather than buying biscuit dough, you make your own from scratch, and no matter how good Cool Whip sounds, it will pretty much never stand up to home made whipped cream with spices whipped right into it.

Also, this is a great dish to serve when you’re entertaining, as you can prep the dish at any point, and put it into the oven so that it comes out nice and warm when you’re ready for dessert. Naturally, you have to give it a little time to cool, especially because you don’t want to liquefy your whipped cream, but it should be served nice and warm. Also, if you want to add a little scoop of ice cream on the side as well, we won’t judge.

There are three sets of ingredients that y’all will need to make this dessert:

For the Fruit Filling

  • Butter or nonstick spray, for baking dish
  • 2 1/2 cups peeled, cored and sliced Granny Smith apples
  • 2 1/2 cups peeled, cored and sliced Bosc pears
  • 3/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon table salt
  • 4 tablespoons unsalted butter, softened, divided

For the Topping:

  • 1/2 cup self-rising flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 2 tablespoons unsalted butter, softened
  • Ice cream, for serving
  • Whipped Cream, for serving, recipe follows

For the Whipped Cream:

  • 1 cup heavy whipping cream
  • 1/2 cup confectioners’ sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
