Guy Fieri’s Strawberry Rhubarb Crumble

Guy Fieri makes a delightfully balanced crumble that is the perfect Summer dessert.

In this video, Guy Fieri shares a straightforward recipe for a delicious Strawberry Rhubarb Crumble.

Despite people’s occasionally mixed feelings on rhubarb, nothing says Summer like fresh fruit in a cobbler, tart, or in this case, a crumble. Balancing the tart of the rhubarb with the freshness of strawberry and sweet nuttiness of the crumble topping, this dessert is light, quick to make, and the perfect end to a quiet cookout on a warm summer night.

The real trick in getting this recipe just right is to get the consistency right for the crumble – rather than trying to really incorporate the butter throughout the mix. You want to keep the butter cold so that it clumps up. It’s those clumps that will make your crumble do it’s thing!

As with all good crumbles, this recipe is intended to be made into individual servings. Since there is no discernible crust, and the crumble should remain on top of the fruit, a crumble shouldn’t be portioned out and scooped; you’re only going to end up with soggy crumble and a pile of fruit that way. If you don’t have individual skillets (we sure don’t) you can make this recipe just as well in oven-safe bowls or ramekins.

The real challenge in this recipe is getting the consistency right for the crumble; other than that, you’re just tossing sliced fruit with sugar, cornstarch, and lemon. Topping with marscarpone instead of whipped cream also adds to the flavor complexity, so your tastebuds aren’t overwhelmed by sweetness.
