Never in a million years, did I ever think I would see store bought yellow shortcake cups show up in a recipe from a professional chef. Moreover, I never thought I’d ever see a recipe where it made sense to use those shortcakes and actually add butter to them, but that’s just what Jeff Mauro does with this delicious summer dessert sandwich idea.

Naturally, leave it to Jeff Mauro to come up with the idea of a “dessert sandwich,” or at least one that doesn’t involve ice cream. Despite his using store-bought cakes, he does whip his own cream, using Vanilla Bean Paste, which delivers a better balance between pure sweetness and also true vanilla flavor. Yes, it costs more than extract, but once you start using it, you’ll realize that it is money well spent.

One other pro tip for those of us who aren’t lucky enough to have an indoor grill pan: naturally, if you have an outdoor grill up and going, that would be ideal. But in a real world where it doesn’t make sense to fire up your barbecue just to get a nice char on some shortcake, you can totally get your shortcake browned in a regular skillet. Just like the griddle, you want to make sure to lay down a little butter first, then you can put the cakes in, just like you’re making a grilled cheese sandwich. You won’t get the grill lines like Jeff does, but you’ll still have a nice, toasty, slightly crisp outside that will be perfect to add your whipped cream and berries to.
