Our favorite cookin’ couple takes us back to the tropics with this easy to prepare marinated grilled pork chop dish.

Summers are the best time for island getaways, but what do you do when you’re craving the Caribbean and don’t have vacation time?

Well, bring the taste of the tropics to your backyard with The Neelys’ delicious pork chop and pineapple salsa recipe.

Get yourself 4 thick bone-in, center-cut pork chops. Whip up the marinade and do the ol’ Ziploc bag trick. Let those sit in the fridge for at least 2 hours.

Now, there’s a bit of dicing for the pineapple salsa, but you can easily accomplish that while the pork chops are marinating.

If you’re really pressed for time, you can often find de-skinned, pre-cut pineapple in your supermarket’s produce section. Dice those up into smaller pieces and you’ll be good to go!

Set aside the pineapple salsa in the fridge until you are ready to grill up the pork chops. If you have leftovers, pineapple salsa can also be a great topping for fish or shrimp.

Marinade Ingredients:

  • ¼ teaspoon lime zest
  • 2 limes, juiced
  • 1 tablespoon honey
  • 1 small shallot, chopped
  • 1 jalapeno, chopped and seeds removed
  • 1 garlic clove, chopped
  • ½ cup olive oil
  • Salt
  • 4 bone-in, center-cut pork chops

Pineapple Salsa Ingredients:

  • ½ pineapple, diced and cored, juices reserved
  • 1 tomato, diced
  • ½ red onion, minced
  • ½ small jalapeno, diced
  • 1 tablespoon chopped cilantro
  • 1 lime, juiced
  • Salt and pepper
