Jeff Mauro knows good sandwiches. And honestly, a burrito isn’t that far off from a sandwich.

In this installment of The Sandwich King, Jeff makes his spin on the best portable food that has ever graced this earth—the burrito.

Now I make it a point to say “his spin” because we’re from California here at RecipeHub, and we prefer different fixings, like sour cream, guacamole, and pico de gallo (also known as The Super) on our burritos.

But, we do agree with Jeff’s flavorful marinade that he lets the skirt steak sit in overnight. By combining citrus juices and spices, he makes a wonderful concoction that tenderizes the meat and imparts its entire delicious flavor onto the meat.

Also of note is Jeff’s use of skirt steak in this recipe. While you might be tempted to use a more expensive or prime cut of meat, I would recommend against it. Skirt steak soaks up flavor well and cooks quickly on the grill.

So even though summer is winding down, get grilling one last time. Whip up this recipe the next time you are expecting a crowd, or the next time you’re in need of a lot of leftovers!

Mojo Marinade Ingredients:

  • 1 tablespoon canola oil
  • Juice from 2 limes
  • Zest from 1 orange
  • Juice from 2 oranges
  • 4 cloves garlic, rough chopped
  • 1 small onion, finely chopped
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon kosher salt
  • 2 pounds skirt steak
