Advertising for the Co-op grocery stores had this Christmas menu in advertising delivered Dec 20/9

Ingredients

  • 1 turkey
  • ==
  • ¼ cup plain yogurt
  • 1½ cup mashed potatoes
  • ==
  • 1 medium red cabbage
  • 12 oz fresh cranberry|cranberries
  • 1 cup water
  • ¼ cup red wine vinegar
  • 2 tbsp brown sugar
  • 1 tbsp lemon juice
  • ½ tsp cloves
  • ==
  • 4 cups peas
  • shallots (to taste)
  • ½ chopped red bell pepper|red pepper
  • ==
  • celery
  • onion
  • apricots
  • cooked ham
  • chicken broth
  • ==
  • meringues cooked ahead, filled with fresh fruit and topped with vanilla custard sauce (like pavlova)
  • ==
  • potatoes
  • oil
  • rosemary
  • ==
  • pan juices
  • 10 ice cubes
  • 1 cup chicken broth + 3 tbsp
  • ¼ cup flour

Directions

  1. Mash potatoes, stir in yogurt.
  2. Serve hot.
  3. Season with salt and pepper to taste.
  4. ==
  5. Wash and shred cabbage.
  6. In a large skillet, toss cabbage with fresh cranberry|cranberries.
  7. Combine remaining ingredients in measuring cup and pour over cabbage.
  8. Simmer until just soft.
  9. Refrigerate and reheat at serving time.

  11. Stir cook peas with shallots and chopped red bell pepper|red pepper.

  13. Stuffing has celery, onion, apricots, cooked ham, chicken broth cooked a day ahead in the oven.

  15. Peel potatoes, rub with oil, sprinkle with rosemary.
  16. Roast in separate pan until golden and soft.

  18. Serve hot gravy - stir 10 ice cubes into the pan juices.
  19. When they have congealed with fat, remove from pan.
  20. In a jar with a lid (or blender) shake together broth and flour until smooth.
  21. Over medium heat whisk this mixture into the defatted pan juices.
  22. Continue whisking until smooth and thick.
  23. Cook, stirring often for 5 minutes.
  24. Serve hot.
